The harvest for the Crémant d’Alsace starts usually begining of september. Our winemaker controls the maturity in the selected parcels. Grapes are exclusively picked by hand. Bunches are put intact in the pneumatic press on low-pressure programs.
After a first fermentation in tanks, a second fermentation takes place in the bottle. This process is called the Traditional Method, used as well for the elaboration of Champagne.
This Crémant d'Alsace presents a particularly fine and elegant effervescence with a persistent cord of bubbles. The color is pale yellow with golden highlights. It has complex aromas with grilled and toasted notes with subtle notes of red fruits. The balance on the palate is supported by a beautiful structure that is both rich and supple, with volume and persistence. The finish with biscuity notes will seduce fans.
The freshness of this cuvée allows it to accompany an evening, from an aperitif to a full dinner if the latter is based on fish.
